We drove the LONG haul from Kansas City, Missouri straight through to Denver, CO and yes the drive is boring…and flat. We knew our options would be limited on food stops (please no more McDonald’s) so we stopped at Joe’s Kansas City Bar-B-Que and yes the hype was REAL!
We had a few friends recommend stopping here for authentic KC BBQ. We went to the original stop, which is an old gas station, and ate like kings! It was AH-MAZING!
Colorado is Cooler in the Summer!
Friends have been telling me for YEARS that Colorado is beautiful in the summer with sooo much to do! Boy were they right! Hiking, mountain biking, kayaking, white water rafting and so much more! The mountain side is GORGEous!
First Stop Denver:
We stayed at the Jacquard in Cherry Creek. Great new, modern hotel with amazing food and beautiful rooms! The highlight of Denver was seeing sorority sisters from college and meeting their families! We got together on a HOT summer day at the Breckinridge Brewery for beers and burgers. Ooh…how I miss these girls and the good old college days! We have stayed in touch over the years and are Beautycounter Consultants together. I love that we all feel so passionate about cleaner skincare for our families.
Vail has been a breath of fresh air. Relaxing, invigorating, and energizing! We were here with the kids last February to ski and are BIG fans of Vail. Vail Village is awesome, amazing shops, restaurants, outdoor fun and for the most part a walking town. Summer or winter, we LOVE it here and will be back!
You can’t leave Colorado without White Water Rafting! Miles and I were SUPER excited to do this and surprise the others with it this morning. We got up REALLY early to drive to Gypsum, CO to float down the Colorado River. They didn’t know what we were doing and when we got here were SO excited for our adventure! We highly recommend SAGE Outdoor Adventures for all outdoor Colorado activities.
Back on the road and headed to Salt Lake City, Utah to see a lot of family!
