Buttermilk Birthday Cake

You’re in for a SWEET treat! In honor of my 41st birthday today, my friend Ashley is sharing her favorite, scratch made Buttermilk Birthday Cake! 

The recipe is amazing as is but it is also incredibly versatile. You can create so many variations of it, depending on what you add in. Mix in rainbow sprinkles for a birthday. A ton of citrus zest (lemon, grapefruit & orange; just lemon; lemon & poppyseed) or add coconut extract instead of vanilla.

Buttermilk Cake

– Flour, 540 g
– Cornstarch, 2T
– Baking Powder, 8 g
– Baking Soda, 7.5 g
– Salt, 9 g
– Butter, 223 g
– Sugar, 418 g
– Vanilla, 8 g
– Eggs, 208 g (4 large eggs)
– Buttermilk, 500 g


1. Combine dry ingredients in a bowl.
2. In a separate bowl, cream butter, sugar and vanilla, then add in eggs one at a time.
3. Alternate adding buttermilk and dry ingredients to bowl will butter mixture.4. Bake at 350 for about 45 minutes until barely golden.

To finish, layer with buttercream or glaze. You could also stud with berries and top with confectioners sugar. So many options!
