It’s Finally Grilling Season!

Looking for something yummy and fresh to grill up this Memorial Day weekend? Today we have a special guest sharing her favorite fish taco recipe with us complete with homemade slaw, pickled onions and avocado…

Hi everybody! My name is Rene and I work with Jennie at CALYgirl STYLD! I was so excited when she asked me to be a guest on her What’s Cooking with CALYgirl blog.

When she asked me what my favorite summer inspired grilling recipe was, my mind immediately went to fish tacos! These babies aren’t just for Tuesdays!

Last summer I went on my first fishing charter in Maryland’s Chesapeake Bay. We came home with tons of Rockfish from the charter and I immediately started gathering the ingredients for these tacos. While I used Rockfish, a Maryland staple also known as Striped Bass, you can use any flaky white fish.

Fish Tacos with Homemade Slaw and Avocado

Ingredients

For the Homemade Slaw

  • 4 c cabbage shredded
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. mayonnaise
  • 1 tbsp. fresh lime juice
  • 1 tsp honey
  • 1 tbsp. fresh cilantro chopped

For the Fish

  • 16 oz (any fresh white fish) filets (4-four ounce filets)
  • flour tortillas (or your preferred tortillas)

For the Marinade

  • 2 tbsp. olive oil
  • 1 tbsp. honey
  • 2 tbsp. white wine vinegar
  • 2 tbsp. fresh lime juice
  • 4 cloves garlic minced
  • 2 tbsp. cilantro chopped
  • 1/2 tsp. salt
  • 1 dash red pepper flakes

Instructions

  • Get the easy pickled onion recipe together an hour in advance – if using. I did and they were fabulous!
  • Combine all the ingredients for the slaw and set aside at room temperature.
  • Mix the marinade for the fish and coat the fish, let stand for 10-20 minutes.
  • Pan saute or grill fish 4-5 minutes on each side.
  • Place tortilla flat on plate and place fish in center of tortilla.
  • Garnish with slaw, onion and avocado slices. I also had some fresh mango that I tossed on mine.

I’m by no means a food stylist – you’ll have to trust me that these were delicious (oh and I absolutely love avocado – pile it up!)
